Homemade Tomato Soup

I first came across this recipe by Orangette about 3 years ago, the most brilliant creative blogger and I have been reading her blog for years.  Her recipes are simple, but yet exquisite and delicious, I have not failed any of her recipes so far.

This is a chickpea variation of an otherwise simple tomato soup with fresh rosemary sprigs.  The addition of chickpeas really brings out the flavour of the tomatoes and herbs, and it adds a layer of creaminess to the soup without having to put cream.


Let’s get started!

First, gather all the ingredients, 1 can of chopped/diced or whole tomatoes, two sprigs of fresh rosemary (insist on fresh, because it really makes a difference), and 1 can of chickpea (in this recipe, I used fresh chickpeas which I have cooked the day before)  note: it is tastier if you could use fresh chickpeas, 1 onion and 4 cloves of garlic.


Finely chop the onions and garlic.


Heat a pot with some olive oil, about 1 tbsp, and sautee the onions and garlic for about 2 minutes.


Then add in the rosemary sprigs and sautee for another 2 minutes.


You don’t want this soup to overcook as you still want it to taste fresh, like summer.. 🙂 so remember not to overcook the garlic and onions in the pot.

Next, pour in the tomatoes, I’m using whole tomatoes because that’s what I had in the pantry.


Crush the tomatoes with your cooking spoon and let it simmer for about 10-15 minutes on low heat.


After simmering about 10-15 minutes, add the chickpeas (about 1-11/2 cup).


And let it simmer on the lowest heat for another 15-20 minutes.


Next, remove pot from the heat, take out about half the tomatoes and chickpeas, and whir in a blender/food processor to create the creamy consistency.


Once blended, put the contents back into the pot, and simmer for another 10 minutes or so, adding salt to taste.

And there you have it..yummy tomato chickpea soup, serve it along with some toasted baguette.

I had mine this morning for breakfast! 🙂
