Overnight Oats

I first came across overnight oats in Kath’s and Jenna’s blog a while back and I prepared it for the first time last night.  It was delicious, creamy and cold for a very warm morning. 🙂

Not pretty but it sure tasted good.

The base:

– 1/2 cup rolled oats

– 1/3 cup plain yogurt ( I use Greek yogurt because that’s what I had)

– 1/2 cup milk

Mix all these ingredients in a bowl and this will be your oatmeal base.  And then your choice of toppings would be endless.

My toppings:

– 5 sliced strawberries

– 1 tbsp ground flaxseed

– 2 tbsp of Tesco fruit and nut muesli

– about 1/2 tbsp of chopped walnuts

– a drizzle of honey

put the toppings into the oatmeal mix, cover and leave it in the fridge overnight.

And the next morning, have it with a nice cup of coffee. 😀

While I was preparing dinner yesterday night, I also made lunch for today.

This is a great sandwich – toasted multigrain bread with olive oil margarine, lettuce, tomatoes, yellow bell peppers and a slice of sharp/strong cheddar.  The bread was small, thick and dense, so don’t really need a bigger slice.

With 2 hard boiled eggs sprinkled with salt and ground black pepper for some protein..

And some mango yogurt with a sliced pear on the side for “dessert”

A great power packed lunch which I hope will last me until dinner.  We have plans to make a pot of chili tonight so dinner will be later then usual..will post the chili recipe up tomorrow!
